Homemade Chicken Jus

This chicken jus is made by roasting chicken bones and simmering them with aromatics to create a deeply flavored sauce. The recipe takes about 2 hours and yields approximately 4 cups of jus.

Ingredients

  • 4 pounds chicken bones (or carcasses from roasted chicken)
  • 1 medium onion, roughly chopped
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 4 cloves garlic, smashed
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 10 cups water
  • Salt to taste

Instructions

  1. Roast the Bones: Preheat the oven to 400°F (200°C). Spread the chicken bones on a baking sheet and roast for 30-40 minutes until browned.
  2. Sauté Aromatics: In a large pot, add the chopped onion, carrots, celery, and garlic. Sauté over medium heat until softened, about 5-7 minutes.
  3. Combine Ingredients: Add the roasted bones to the pot along with the tomato paste, bay leaf, peppercorns, and water. Bring to a boil.
  4. Simmer: Reduce the heat to low and let the mixture simmer uncovered for 1.5 to 2 hours, skimming off any foam that rises to the surface.
  5. Strain the Jus: Once the jus has reduced and is flavorful, strain it through a fine-mesh sieve into a clean pot, discarding the solids.
  6. Season: Taste the jus and season with salt as needed. Simmer for an additional 10-15 minutes if you want to reduce it further.
