Ingredients

  • 2 ribeye or sirloin steaks (about 1 inch thick)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 3 egg yolks
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped shallots
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon lemon juice
  • Pinch of cayenne pepper (optional)

Instructions

  1. Prepare the Steaks: Season the steaks generously with salt and black pepper. Drizzle with olive oil and let them sit at room temperature for about 20 minutes.
  2. Make the Béarnaise Sauce: In a small saucepan, combine the white wine vinegar, chopped tarragon, and shallots. Simmer over medium heat until reduced by half. Strain the mixture and set aside.
  3. Whisk Egg Yolks: In a heatproof bowl, whisk the egg yolks with the vinegar reduction. Place the bowl over a pot of simmering water (double boiler) and whisk until the mixture thickens.
  4. Add Butter: Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Stir in lemon juice, cayenne pepper, and season with salt to taste.
  5. Grill the Steaks: Preheat the grill to high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let the steaks rest for a few minutes before slicing.
