Seared Ahi Strawberry Spinach Salad

SEARED AHI TUNA

  1. Rinse and pat dry the tuna. In a small bowl combine olive oil, sesame oil, lemon juice, ginger, soy sauce, salt & pepper. Whisk ingredients to combine. Dip both sides of tuna steaks in mixture and place in a food storage bag. Pour remaining mixture into bag and let marinate for one hour.
  2. Spray a non-stick skillet with cooking spray and heat pan over medium heat. Place steaks in pan and pour remaining marinade over steaks. Cook first side approximately 2-3 minutes depending on thickness of steak. Turn steaks and cook 2 minutes making sure not to overcook steaks.

DRESSING

  1. In a blender or food processor, combine sugar, vinegar, salt, mustard and onion and process for 20 seconds. With blender or food processor on high, gradually add oil in a slow, steady stream. Stir in poppy seeds.

  • SALAD
  • Mixed spring greens
  • Sliced strawberries
  • Reduced Fat Athenos Feta Cheese
  • Pine Nuts
  • AHI TUNA
  • 1 pound fresh sushi-grade ahi tuna steaks
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ground ginger
  • 1/2 tsp low-sodium soy sauce
  • 1/4 tsp kosher salt
  • 1/8 tsp cracked black pepper
  • POPPYSEED DRESSING
  • 1/3 cup white sugar
  • 1/2 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground dry mustard
  • 1 teaspoon grated onion
  • 1 cup vegetable oil
  • 1 tablespoon poppy seeds
